Chocolate Chip Pecan Pie

My family is having a very special Christmas this year. My firstborn and his significant other flew in from Los Angeles on Wednesday; my parents will drive down from southern Illinois on Monday. I am blessed that my brother and his wife and my other two children live in the area. So Christmas Eve we will all gather at my brother’s house for gifts and goodies, but Christmas Day everyone will come to my house for our traditional feast: turkey, chestnut dressing, sweet potato casserole, cheesy potato casserole, green beans, broccoli salad, cranberry sauce, and yeast rolls. And for dessert, I am making two pies–one pumpkin, one pecan. Make that CHOCOLATE CHIP pecan–because almost anything is better with chocolate!

Here’s the recipe.
3 large eggs
1 1/2 cup light corn syrup
1/2 cup sugar
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
1 cup pecans, halves or pieces
Beat eggs slightly with fork. Stir in syrup, sugar and vanilla until blended. Add chocolate pieces and pecans. Mix well. Pour into unbaked pie shell (I use Pillsbury!) and bake at 375 degrees for 45 to 50 minutes or until knife comes out clean.

Yumm. That pie sounds wonderful. What a celebration. Thanks for the recipe. We made a similar pie at Thanksgiving except it had coconut in it.
